Application

Formulation

Derived from milk, evaporated milk is produced by inflicting heat on milk to evaporate the excess water. This reduces the volume, but enhances the richness and thickness of the milk. All essential nutrients are retained throughout this process making evaporated milk rich in proteins, vitamins, and minerals.

Specification

Appearance: Evaporated milk typically has a creamy, pale yellow color. It is thicker and more concentrated than regular milk. The texture is smooth and uniform.

Fat content: Higher fat content than that found in regular milk, 7-8%.

Sugar content: Despite being semi sweet, evaporated milk is unsweetened and contains no added sugars. It gains its sweet taste due to caramelization during the heating process.

Water content: Typically about 60% of water is removed during the evaporation process, resulting in a more concentrated milk product.
