What is Sodium Acid Pyrophosphate?

Sodium acid pyrophosphate (SAPP) is commonly used with sodium bicarbonate to create baking powder. Monocalcium phosphate can also be used as an acid substitute for SAPP.

SAPP can also be used to prevent discoloration of potatoes and to stabilize whipped cream.
